New Holiday Recipes Are Offered
Rich's Coffee Rich, frozen
non-dairy (pareve) creamer,
offered the following recipes
for the holidays:
Braised Brisket
1 whole brisket of beef (4 to 5
pounds)
1 pound onions, peeled and
cut in thick slices
1 cup Coffee Rich® frozen
non-dairy creamer, thawed
1/2 cup red wine
1 tsp. seasoned salt
1/4_1/2 tsp. garlic powder
1 /4 tsp. black pepper
1 tbsp. potato or corn starch
1 /2 tsp. seasoned salt
1 /4 tsp. black pepper
1 cup Coffee Rich® frozen
non-dairy creamer, thawed
Place meat, fat side down, in
roaster. Cover with onions.
Place cover on roaster. Bake at
350 degrees F. for 1 hour. Turn
meat over. Score fat. Baste
with 1 cup of the Coffee Rich
non-dairy creamer and the
wine. Cover and roast 1 hour
longer. Mix 1 tsp. seasoned
salt with garlic powder and 1/4
tsp. pepper; sprinkle over
meat. Cover and roast until
tender, about 30 minutes. Re-
move meat from roaster and
keep warm; let rest about 30
minutes before slicing.
Make gravy. Skim off fat
from drippings in pan if de-
sired. Bring drippings to a boil.
Mix starch with 1/2 tsp sea-
soned salt and 1/4 tsp pepper;
add 1 cup Coffee Rich® non-
dairy creamer and stir until
smooth. Add to boiling drip-
pings. Cook and stir until thic-
kened. Serve with the sliced
brisket. Makes 10 to 14 serv-
ings.

Roast Chicken,
Matzo Dressing
1 (6- to 8-lb.) roasting chicken
or capon
2 cups boiling water
1/2 tsp. seasoned salt
3 plain, unsalted matzot
3 /4 cup Coffee Rich® frozen
non-dairy creamer, thawed
1 /4 cup water
1 medium apple, cored and
chopped or 1 medium onion,
chopped
1/2 cup chopped celery
1 1/2 tbsps. chopped parsley
1 tsp. seasoned salt
tsp. ground ginger
1 /4 tsp. black pepper
1 /4 tsp. poultry seasoning or
rosemary
Remove neck and giblets
from cavity of chicken. Rinse.
Cook neck and giblets in 2
cups boiling water until ten-
der. Sprinkle 1/2 tsp. seasoned
salt in cavity. Meanwhile,
coarsely crumble matzot. Add
Coffee Rich® non-dairy
creamer and 1/4 cup water.
Soak 30 minutes, stirring oc-
casionally.
Add apple, celery, parsley, 1
tsp. seasoned salt, ginger
pepper and poultry seasoning
to matzot. Chop giblets and
add to matzo mixture. (Re-
serve broth for gravy.) Mix
well.
Stuff matzo mixture into cav-
ity. Close cavity and truss the
chicken. Place in roasting pan.
Do not cover. Insert meat
thermometer in thickest part of
breast meat, not touching
bone. Bake at 350 degrees F.
for 2 to 3 hours or until juices
run clear and thermometer
reaches 185 degrees F. Re-
move from oven. Let rest for
about 20 minutes before carv-
ing. Makes 8 to 10 servings.
GRAVY
Combine pan drippings and
broth from giblets to make 1
cup liquid. Bring liquid to a
boil. Mix 1 tbsp. potato or corn
starch with 1/2 tsp. rosemary,/
tsp. seasoned salt and 1/8 tsp.
black pepper. Stir 1 cup Coffee
Rich® frozen non-dairy
creamer, thawed, into starch
mixture until smooth; then stir
mixture into boiling liquid.
Cook and stir until gravy is
thickened. Makes about 2
cups.

Raisin Apricot
Kugel Recipe
8 oz. noodles
6 cups boiling water
1 1/4 cups Coffee Rich® frozen
non-dairy creamer, thawed
2 eggs
1-2 tbsps. sugar
3 /4 tsp salt
1/2 tsp. ground cinnamon
1 (83/4 oz.) can apricot halves,
drained and chopped
1/2 cup raisins
Cook noodles in boiling
water for 10 minutes. Drain
well. Beat together Coffee
Rich® non-dairy creamer with
eggs and seasonings. Mix to-
gether noodles, egg mixture
and fruit. Turn into greased,
shallow 2 quart casserole.
Cover with foil. Bake at 350
degrees F for 20 minutes. Re-
move foil. Bake about 10 min-
utes longer or until set. Let
stand 5 to 10 minutes before
cutting to serve. Makes 6 to 8
servings.
MATZO KUGEL
Coursely crumble 8 plain,
unsalted matzot. Add 11/2 cups
water. Soak for about 30 min-
utes, stirring occasionally.
Substitute for the cooked,
drained noodles in above re-
cipe.
