basil which was excellent.
For a main dish I had mag-
nificent pheasant which
was sliced, garnished with
the same chanterelles and
presented in a basic au jus
sauce which again let this
fresh and beautiful game
stand on its own.
"This was followed with a
beautiful presentation of
various chevres (goat
cheese), camembert and two
other cheeses whose names
I can't remember, but whose
taste and character were
superb. Dessert featured a
freshly made espresso ice
cream, topped with hot
fudge and freshly whipped
cream with an infamous
spear of Halavah imported
from Brooklyn.
"This restaurant deserves
all the acclaim I or anyone
else can give it and is one of
the many great restaurants
in New York."

case, two cocktail areas (one

Whitehouse Manor now
has a new entrance, with
low stone wall . . . On corner
of Nine Mile and Novi Rd. a
sign now says, "Whitehouse
Manor 600 feet."
NORM LePAGE will
open another restaurant
around May 1983 . . . simi-
lar to his present, very suc-
cessful Nifty Norman's on
Commerce Lake Rd. in Wal-
led Lake . . . It'll be at the
old Grand Trunk train
depot on Eaton in Birming-
ham . . . and seat around
240 in four different rooms
. . . Birmingham property
owner biggies Eric Lutz and
Tony Brown will also be in
the picture.
ALTHOUGH GOOD
food is still of prime impor-
tance to many, there are
those who would consider it_
as secondary . . . That the
type of food involved serves
only the purpose of filling a
cavity . . . However, the res-
taurant employees create
those impressions which
would stand out . . . and are
in many cases the real dif-
ference between a good and
bad meal . . . or success and
failure of the dining estab-
lishment.
No matter how good food
may be . . . service can add
to or take away whatever
-enjoyment could be attained
with consumption . . . In
other words, a waiter or
waitress can truly make or
break a place.
Most restaurant own-
ers who've been in the
game a while recognize
this very well . . . Many of
those who have never
had restaurant experi-
ence are easy marks of
incompetency ... The
number of restaurant
owners who've been in
the business a while ...
and still can't tell good
from bad, is unbelievable
... They're the only sal-
vation of waiters and
Waitresses who other-
wise couldn't hold a job
...Jet alone find one.
Bad chefs . . . especially
those who do purchasing .. .
are another story . . . Also
bartenders.
