/4 cup sugar
/4 cup Amaretto di Carmel

-Grated rind and juice of 1
orange
4 large, firm apples
Combine sugar, Amaretto di
Carmel, orange rind and juice
in a heavy saucepan. Heat
slowly until bubbly. Peel, core
and thickly slice apples. As
they are sliced, place them in
pan. Simmer until apples are
tender and all liquid has
evaporated. Chill and serve
plain, sprinkled with shredded
coconut or whipped cream.
Yield: 4 servings.
