Dr. Shoshana Margolin es-
tablishes her clinical
validation of vegetarianism
and offers some very useful
22 pages of recipes for veg-
etarian versions of "nostal-
gic" Jewish dishes. No
longer does the Bar Mitzva
lad have to be sculpted in
chopped liver, nor need
gefilte fish grace the table.
They can be successfully,
tastefully, and mercifully
replaced with vegetarian
chopped "liver" and "gefilte
dish! (sic)!"
The reader can find a list-
ing of Jewish vegetarian
groups and activities na-
tionally and internation-
ally. The latter includes a
section on vegetarianism in
Israel where, several years
ago, Labor MK Mordecai
Porat introduced a bill out-
lawing flesh-eating on the
premise that the economy
could not continue to bear
the costs involved in com-
batting diseases arising
from meat consumption.
(The bill died in committee
when the Rabin govern-
ment fell.)

"Judaism and Veg-
etarianism" is well-
documented- with com,
prehensive but not stultify-
ing reference notes and- a
very adequate bibliog-
raphy.
For the traditionally ob-
servant Jew in the U.S., to
whom "keeping kosher"
presents a constant chal-
lenge and, often, genuine
hardship — whether in the
availability of dining-out
accommodations or the
often exorbitant prices
charged by the kosher meat
establishment for ritually-
slaughtered carrion for the
home table — the vegeta-
rian way of life affords a
simple, economical, logical,
and readily-available solu-
tion.
In his conclusion, Dr.
Schwartz asks:
"In view of the strong
Jewish mandates to be com-
passionate to animals,
preserve health, help feed
the hungry, preserve and
protect the environment,
and seek and pursue peace
