Summer Recipes

RICE, APPLE,
ALMOND SALAD
2 cups chilled cooked rice
1/2 cup finely chopped celery
1/2 cup toasted almonds, sil-
vered
3 unpeeled apples, diced
1/2 tsp. curry powder, optional
1 /2 cup mayonnaise
Toss all the ingredients to-
gether lightly and serve on a
platter with lettuce and tomato
wedges.
CUCUMBER SOUP
2 medium cucumbers, diced
2 cups buttermilk
1 cup yogurt
salt, pepper to taste
Blend in blender on a high-
speed. Garnish with fresh dill
or parsley. Serve chilled.
Serves six.
