Songs, Recipes in Cardozo
Text of Jewish Observances
Arlene Rossen Cardozo
provides interesting guid-
ance to Jewish observances
in "Jewish Family Celebra-
tions: The Sabbath, Festi-
vals and Ceremonies" (St.
Martin's Press).
There is wholesomeness
and encouragement to fam-
ily intimacies in the man-
ner in which the author
encourages group celebra-
tions.
The Cardozo book has
special merit in its linking
the sanctity of Jewish ob-
servances with the arts and
with the culinary.
Her book suggests
singing in observances, and
the musical selections in
her book add to its merits.
Also, there are recipes to
enhance the celebrations,
and these recipes are sam-
ples of the offerings in this
volume:
Fish Patties
Patties:
2 lbs. ground freshwater fish
salt and pepper to taste
1/2 cup bread crumbs
2 eggs
1 cup water
1 tsp. ground cumin
1 /4 cup chopped fresh parsley
6 tsps. oil
Sauce:
3 (16-oz.) cans tomato sauce
2 medium onions, peeled and
chopped

1 green pepper, seeded and
chopped
In a bowl mix together all of
the ingredients for the patties.
Refrigerate for several hours.
Then form the cold mixture
into about 16 patties. In a fry.-'
ing pan, saute the patties, a
few at a time in hot oil until
brown on both sides. Place the
patties in one layer on a
greased baking dish (layering
them will cause them to crum-
ble). In a separate bowl, mix
together the tomato sauce,
onion and green pepper. Pour
the sauce over the patties.
Cover tightly with foil. Bake at
350 degrees for one hour.
Serves eight.
Fruit Ice
1 (12-oz.) can frozen orange
juice concentrate
3 cans water
2 (16-oz.) packages frozen
strawberries
1 /4 cup sugar
Other fruit as desired: for in-
stance,
1 cup fresh pineapple slices
1 cup drained frozen peaches
Whirl all the ingredients in a
blender until frothy. Then pour
mixture in cupcake tins into
which paper cupcake holders
haVe been placed. Freeze. In-
dividual ices can be removed
by putting the bottoms of the
cupcake tins in hot water for a
few seconds. then the ices can
be placed-on a stainless steel
serving tray and kept in the
freezer until serving time.
Yields 24 ices.
Protestant Waldensian and
Jewish- communities. which
date back to the period
1929-1930.
It is expected that Italian
Jewish communities in the
future will be able to or-
ganize separate classes on
Judaism on request. The de-
tails remain to be defined
but the approach is expected
to be extended to the grade
school as well as the high
school level:

LONCON (JTA) —
Queen Elizabeth II is to be
the guest of honor of the
Board of Deputies of British
Jews at a reception in Lon-
don Dec. 1 during a confer-
ence of Jewish leaders from
the British Commonwealth.
"I cannot think of a time
when the board and our
community would find the
acceptance of such an invi-
tation more welcome, more
reassuring or more splendid
than the present," said Gre-
ville Janner, MP and the
board's president.

Religion' Made Optional
for Some Italian Students
ROME (JTA) — The Ita-
lian Parliament has passed
a law that will make "reli-
gion" an optional subject in
the high school curriculum.
It has been hailed as a vic-
tory for the democratic and
pluralistic philosophy and a
fundamental change in the
way religion is taught in
this Catholic nation.
Hitherto, religion, mean-
ing Catholicism, was a re-
quired subject, though stu-
dents could request exemp-
tion at the beginning of the
school year. Under the new
law, students may elect to
include or exclude religion
- from their 'studies.
In addition, relationships
between the Catholic and
various non-Catholic reli-
gions communities in Italy
will be defined when sepa-
rate agreements come up for
revision. These agreements
include the Church-state
Concordat and agreements
between the Church and
