4 lbs. chuck roast
5 onions
oil
2 cans small potatoes
2 cans baby carrots
Fry onions in oil in a large
Dutch oven until transparent.
Liberally coat the surfaces of
the roast with mustard. Brown
all surfades. Add 3/4 cup of
water. Simmer covered on top
of stove 3-4 hours or until ten-
der. Turn occasionally and add
water if necessary. Drain veg-
etables and add to gravy of
roast to heat. Serves 8.
