These are but three of the little things that people re- member so very much about having an elegant dining experience at The Bench- mark in Michigan Inn on J. L. Hudson Drive, Southfield . . . They remember, too, the warm smile and gra- cious congeniality of a hos- tess like Barbara Davies . . . and the smiling polite- ness of a master like maitre d' Monsieur Joseph Calemma. Certainly the food and service are prominent fac- tors, but people seldom re- member what they had or who served it to them .' . . unless that waitress or wai- ter attends them regularly. Seating is 140 at The Benchmark . . . amid its choice brown and earth tones, softly lit chan- deliers and recessed lighting, brick wall, brass accents, padded booths and padded chairs at ta- bles . . . the violin strains of white-tie-and-tail tuxedo'd Gino D'Alessio, strolling about the room playing requests like "Somewhere My Love" from Dr. Zhivago which he receives about 25 times a night . . . fresh flowers, candlelights and lighted plants. Gino, by the way, played the sound track of the origi- nal "Godfather" movie and was in the wedding scene . . . He also played and ap- peared in other movies such . as "Three -Coins In The Fountain." Another delightful touch . . . When ordering tea at The Benchmark, ydu are presented with a wooded walnut box containing a choice of exotic teas . . . And coffee lovers will find little, if any, 'difference in the decaffeinated brew also served . . . and available throughout the. hotel. The Benchmark takes away a lot of false glitter, too . . . by wisely having free valet parking at lunch or dinner . . . Stamping a person's ticket does much in the cause of public relations . . . automatically making the price of his or her meal much lower . . . Nobody minds tipping for good valet service . . . but few like to pay for parking at a restau- rant. Dining with wife Frieda, Randy and Ellen Kehr, food and beverage director at Michigan Inn, and Burt and Jean Mar- kowitz, its community fill lations director, we sat at my favorite Benchmark table . . . in a corner overlooking the patio and man-made pond with its colored lights dis- played on the waters of a fountain spraying from the pool. Our waitress, Roxanne Rusk, is among the finest . . . and one that customers would remember . . . with her pleasant smile, gracious manners and delightful ef- ficiency . . . I also like her soft statement as she offers the bill of fare . . . "'May I present the menu?" Few people make a Caesar_salad like Monsieur -- Joseph, who came to the , 1 U.S. in 1975 from the French Riviera, where he started as head captain and eventually owned his own restaurant in Menton near Monte Carlo . . . It is his own recipe, prepared at tab- leside with the deftness that can only be achieved by masterful know-how and experience. Joseph's Monsieur Caesar salad is not over- powered by any one ingre- dient . . . anchovies or gar- lic, both of which are blended to make for subtle taste . . . It stands on its own merits and you can enjoy the Romaine lettuce. He is also one of the very few culinary artists who makes his Caesar salad in a wooden bowl . , . an art which seems - to have been lost in this world of plastic. Roxanne, walking around the table and serving from - the- right, instead of reach: ing in any direction, brought Monsieur Joseph's Caesar salads to four at our table . . . Also his tableside delights of Steak Diane (filet with shallots, chives, mushrooms, garlic, cream and Burgundy wine) and Filet of Beef Carpetbag (tenderloin filled with oys- ters and flamed with bour- bon). I had a cup of deli- cious' chilled Vichyssoise potato puree soup . . . and following the grapefruit sorbet (deli- cate sherbet), a dish pre- pared by the Bench- mark's new chef, De- borah Caldwell . . . Veal Oscar (veal sauteed and topped with crabmeat, Bernaise saute, green asparagus, and foie gras) . . . Chef Deborah has been at the Benchmark six years . . starting as a pantry girl and working her way up to the position of head chef in a dining room that must be considered among the finest gourmet restaurants in Michigan The soft brown tablec- loths at Benchmark are not allowed to be cluttered at any time with used dishes or silverware . . . This is where an efficient busboy like Danny Jones comes in . . . ever present to make certain elegant dining at The Benchmark is just that. Although a change in ownership has occurred at Michigan Inn from Westin to -Servico, the tradition of fine dining at The Bench- mark is maintained . . . (Continued on Page 31) J
