assured of an overwhelming
selection for the Passover
week. That immense
number indicates at once
that the contents of this
volume provide selections
for the entire year, for every
occasion.
Produced by a Mizrachi
group, whose devotion to
the task is indicated in the
fact that this is the second
edition of a Passover recipe
book, the housewife is as-
sured that it is strictly
kosher, that it adheres to all
the rules for Passover and
kashrut.
There is a variety of food
suggestions so impressive
that the housewife will be
overwhelmed.
There was a time when
there were restrictions.
They have vanished, espe-
cially when the need is
treated by experts. And-the
West Orange Mizrachi
Women emerge as experts.
Who would have imagined
that pizza could be avail-
able for Passover? It is! Here
is what is provided in the
Mizrachi Women's "The
Passover Feast":
MEAT PIZZA
1 recipe Mock Pizza (from
Dairy section)
1 can tomato sauce
/2 lb. ground meat or chopped
salami or sliced frankfurters
2 tbsps. oil
garlic powder, to taste
onion powder, to taste
1 green pepper, diced (op-
tional)
1 onion, diced (optional)
Prepare one recipe Mock
Pizza. Brown ground meat in
oil (if ground meat is to be
used). Brown green peppers
and onions, if desired. Cover
each pizza with tomato sauce
and ground meat, salami or
frankfurters. Sprinkle with gar-
lic powder, onion powder,
green peppers and onions.
Bake in oven until hot.

Vegetarians who fear the
Passover may obstruct
them will be relieved by the
offerings. Here is an exam-
ple in a recipe for eggplant
salad:
EGGPLANT SALAD
1 eggplant
1 /2 green pepper, chopped
3-4 slices cheese
chopped garlic
1 tbsp. onion, chopped
1 tsp. oil
1 tbsp. lemon juice
salt and pepper to taste
Bake eggplant until soft.
Peel, mash. Add green pepper,
- cheese, garlic and onion to
taste. Add oil and lemon juice.
Season with salt and pepper.
Variation: Add eggs and

MOCHA SPONGE CAKE
/4 cup potato starch
1 /4 cup cocoa
8 eggs, separated
1 1/4 cups sugar
1 /4 cup strong coffee
1 /4 tsp salt
Preheat oven to 325 de-
grees. Sift together potato
starch and cocoa, three times.
In a large bowl whip egg yolks
until light, gradually beating in
the sugar. Mix in coffee and
cocoa mixture. Beat egg
whites with salt until stiff. Fold
gently into cocoa mixture.
Pour into ungreased tube pan.
Cut through batter with a knife
several times. Bake in pre-
heated oven for 60 to 65 min-
utes. invert cake; cool com-
pletely. To remove, gently
separate cake with spatula.
Sprinkle with sugar and serve
in wedges.

CHOCOLATE CAKE
7 eggs separate 6
1 1/2 cups sugar •
1 /2 cup potato starch
' 1/4 cup cocoa
1/2 tsp. salt
Separate 6 eggs and beat
whites with 1 cup of sugar.
Beat yolks with 1/2 cup of sugar
and add whole egg. Alternate
whites, potato starch, salt and
cocoa mixture into yolks. Bake
350 degrees for 50 minutes.
