THE DETROIT JEWISH NEWS Center Camp to Inaugurate Sailing Program This Year --, The Jewish Community Center will inaugurate a program in sailing for youth in grades seven through nine during its summer day camp program July 28-July 23 and July 26-Aug. 20. The coed program will focus on the fundamentals of seamanship, sailing, rac- ing techniques, boat maintenance and rules of ,the water. Enrollment is limited. The sailing program will be directed by Bernard Wolf, head of the Center's men's health club. Wolf holds a master's degree in physical education from Southern Connecticut State University. Prior to his cur- rent post, he was the direc- tor of health and physical education at the Hartford (Conn.) Jewish Community Center. Wolf is certified by the U.S. Coast Guard Power Squadron in boat safety and holds .national YMCA scuba certifica- tion. He is a member of the American Red Cross Water Safety Committee. In addition to sailing, other specialty camps are offered. Among them -are: tennis and sports, gymnas- tics and dance, safari and teen caravan. For children in kinder- garten through sixth grade there is a full-day camp ex- perience and a half-day plan with optional child care is offered for pre-school and kindergarten-age young- sters. Early registration dead- line is May 1. Parents who enroll- their children before May 1 will be entitled to a fee reduction. There is an extra charge for the child care option. Israeli Culture Programs Offered While the exhibit and sale entitled, "Artists and Craftsmen of Israel Now," continues in the Ham- BERNARD WOLF burger Lobby of the Jewish Community Center, Gary Bertini, Detroit Symphony Orchestra music adviser, will speak in the DeRoy Studio Theater on "The De- velopment of Israeli Sym- phonic Music" at 2 p.m. Sunday. Bertini is the final speaker in the Israel Cul- ture Series co-sponsored by the Israel Information and Resource Center and the Jewish Center. In 1978, Bertini was awarded the Israel State Prize for music, the highest honor awarded to civilians on the occasion of the 30th anniversary of the state Israel. There is an admis- sion charge to the Bertini lecture. At 3:30 p.m., The Bikurim Israeli Dance Concert will be pre- sented. The group, con- sisting of dancers, musi- cians and a singer, will perform a selection of dances and original mus- ical arrangements repre- senting various elements of Jewish culture. Following the perform- ance Bikurim will teach the audience some simple Is- raeli folk dances, after which will be request danc- ing. Refreshments will be served. Admission to the Bikurim Dance Concert is nominal. For information, call the Center, 661-1000, ext. 250. Passover Recipes Offered COFFEE SPONGE CAKE 12 oz. package Passover sponge cake mix 3 tbsps. Brim instant coffee 6 eggs 1 /4 cup water Stir Brim (kosher for Passover) instant coffee thoroughly into box of mix. Combine and bake cake as di- rected on box. Frost with Cof- fee Whipped Cream if desired. 1 cup grape halves 1/2 cup maraschino cherry halves 1 /2 cup shredded coconut Gradually add milk to sof- tened cream cheese, mixing until well blended. Add remain- ing ingredients; mix well. Chill several hours or overnight. Makes 8 to 10 servings. Varia- tion: Add 2 bananas, sliced, just before serving. ** * COFFEE WHIPPED CREAM 1 cup heavy sweet cream, cold 11/2 tsps. Brim instant coffee 2 tbsps. sugar Place Brim instant coffee and cold sweet cream in a chil- led bowl and whip until it starts to thicken. Add granulated sugar gradually and beat until just thick enough to hold its shape. Spread on top and sides of Coffee Sponge Cake or other cakes. * * * PASSOVER PEACH FRAPPE 3 tbsps. instant Maxwell House, Yuban or Sanka cof- fee 11/2 cups cold water 1 can (16 oz.) sliced peaches, chilled 1 pint vanilla kosher-for- Passover ice cream Crushed ice Dissolve instant coffee in cold water in a medium bowl. Reserve 5 small peach slices for garnish, if desired. Com- bine remaining peaches with syrup, and about 11/2 cups of the ice cream in blender con- tainer. Blend at high speed until smooth. Add to coffee mixture; blend well. Serve in tall glasses over crushed ice or pour into punch cups. Top each serving with a small scoop of the remaining ice cream. Garnish with re- served peach slices. Makes about 5 cups or 5 large or 10 small servings. * * * MOCHA SPONGE CAKE 12-oz. package Passover sponge cake mix 2 tbsps. Maxim instant coffee 6 eggs, separated 1 /4 cup water 11/2 ounces bittersweet choco- late, grated Stir Maxim instant coffee into package of mix. Combine ingredients and bake as di- rected on box. While folding in beaten egg whites,- add the grated chocolate.
