The Best of Everything

LAST YEAR, Chef Joe
Beato was president of the
Chef's 200 Club . . . and
created the Great Soup Ket-
tle Race for March of Dimes
. . . It was most successful
. . . (Golden Mushroom won)
. . . as various restaurants
around town created
"chariots" drawn by folks
who worked at the eateries.
Because of its great suc-
cess, plans for the Second
Annual Race are well under
way.
This year, Joe, executive
chef at Henry Ford Hospital
on Grand Blvd., is again
president of the Chefs 209
Club . . . very active in
charitable work.
In 1980, Joe was recog-
nized by his peers as Chef Of
The Year.
He never graduated
public school ... leav-
ing Bari, Italy where he
was born, when 14 years
old, and getting work as a
Cook's Apprentice at the
Hotel du Lac in Switzer-
land ... While working
there, Joe also attended
L'ecole d'hotelien ... and
in 1964 graduated as a
Comis de Cuisine.
He was 18 when they
made him head chef at
Hotel du Lac . . . quite an
advancement in four years
at the 1100-room hotel .. .
from cook's apprentice to
executive chef . . . But a
year later it was almost like
starting over again . . . Joe
immigrated to Windsor,
Ontario, and due to lan-
guage barrier, he had to ac-
cept a position as cook's
helper . . . Imagine this .. .
having someone help who
knows more than you!
From 1964 to 1971, while
at Gino's Italian Village
and Sheraton Viscount in
Windsor, Joe entered Art
Culinary Exhibits- . . . In
1971 he won first prize in all
food categories.
Many folks may re-
member Joe . . . In 1971 he
came to the United States
and accepted the position of
night chef at Hugo's in De-
troit . . . Six months later he
decided to leave the hotel
restaurant food business
and accept the challenge of
health care . . . as head chef
at Oakwood Hospital . . . In
1975, he took the position of
executive chef at Henry
Ford Hospital.
The year 1980 was the
biggie though ... That's
when Joe became a Un-
ited States citizen.
His work at Henry Ford
Hospital is many times
looked upon by others with
amazement . . . Joe Beato's
culinary expertise is consi-
dered among the finest.
BRANDY, featuring
three female lead vocalists,
will be at Dewey's in Michi-
gan Inn for a one-week en-
gagement, this Monday
through Saturday . . . The
dazzling show band per-
forms two show sets and two
dance sets each evening be-
tween 9 p.m. and 1 a.m.
"ACCORDING TO
JOHN/PAUL," musical
revue of John Lennon and
Paul McCartney, continues

its extended run at the
Grease Pit Theater beneath
Doug's Body Shop on
Woodward . . . Perfor-
mances are Fridays at 9 and
Saturdays at 7 and 9:30 .. .
with reservations re-
quested. Ron Aldrich, house
magician, opens both
Saturday shows.
MYSTERY
THE
writes:
MUNCHER
"Something about old paths
is always luring no matter
where they lead. And some-
thing remains that can't ob-
literate your footprints.
"Strolling in and around
Detroit in memory brings
back a happy time. It was a
honeymoon, a Sweet 16
party, a Bar Mitzva, an an-
niversary or simply a celeb-
ration of being young and
out on the town.
"You can almost hear the
half-sad, half-gay tunes
played by strolling gypsies
caressing violins in Delray's
Hungarian Village. The
czardas, a fast, frolicsome
folk dance, was executed by
old-timers who remembered
the music and dancing of
Hungary.
"Favorite dishes were
goulash, veal or chicken
paprikash and stuffed
cabbage. Hungarian
cooks are famous
throughout the world.
And even the most dis-
criminating diners re-
lished the Hungarian Vil-
lage cuisine.
Do you remember strol-
ling along Jefferson and
stopping in the City-County
Building's lower level
Greenfield Cafeteria? The
salads were among the cris-
piest. The walls were faced
with green tiles and it was
like eating underwater.
"The Latin Quarter con-
jures up memories of
. glamor, music, entertain-
ment and festive occasions.
The Latin Quarter was like
a sophisticated lady who
lived with a touch of class,
faded with the times and
was never .quite duplicated.
"Footsteps follow old
paths back to fine restaur-
ants like Red Kemp's, Cliff
Bell's and Mayfield Chop
House. The steaks at these
dining . spots were among
the best in their day.
"It wasn't as long ago
when we strolled across
Woodward and took the
elevator to the 26th floor
of the Michigan Consoli-
dated Gas Co. building's
Top of the Flame with its
magnificent view.
"On a clear day you could
see Lake Erie. And from
that height even the park-
ing lots looked good. Cars
resembled many-colored,
tiny mosaic tiles.
"Top of the Flame isn't
remembered for its food.
But the Oriental atmos-
phere was exotic and so
were the cocktails like the
Cherry Blossom, a blend of
cherry and blackberry
brandy and lemon juice
served in a tall, frosty glass
by a kimona-clad Oriental
waitress.
"And back in 1977, Henry
