Cut in shortening with two knives or pastry blender until size of peas. Blend 11/2 egg yolks and water. Sprinkle gradually over flour/ shortening mixture. Toss lightly with fork just until dough holds together. Use additional water if necessary. Wrap ball of dough in wax paper and refrigerate several hours. (May be kept for several days, i.e. may be frozen and used as desired.) FILLING Poppy seed filling may be purchased already prepared. If desired, adapt to taste by add- ing honey, chopped nuts, lemon juice, orange rind or orange marmalade. For a fruit filling, combine 2 parts pre- pared prune filling with one part apricot preserves. If de- sired, add finely chopped nuts or orange marmalade. Pre- pared cherry filling - may also be used. Let dough stand for 10-15 minutes at room temperature. Take a small portion of dough, keeping remaining amount well covered. Roll out to a little less than 1 /8" thick. Cut with a 21/2" diameter cookie cutter. It is important to pick up loose dough immediately and add to original ball, recovering at once to keep from drying. On each circle place 1/2 teas- poon of filling. Pinch dough together to form a triangle — a 3-cornered hamantash. Place on a lightly greased cookie sheet. Brush tops carefully with mixture of 1/2 egg yolk di- luted with two drops of cold water. Sprinkle generously with sugar or cinnamon and sugar. Bake in 375 degree oven for 15 minutes or until golden brown. With spatula, remove im- mediately to cake rack. Cool and store uncovered. Dust with confectioner's sugar be- fore serving. For tickets, call Evelyn Kreger, 544-8350. * * * * * * * * * * 1 large head of cabbage 1 /2 cup strained tomatoes 1 large onion 1 tbsp. syrup or honey 2 tbsp. sugar 1 /4 tsp. salt, dash of ginger 1 whole allspice, 1 clove Y2 bay leaf juice of Y2 lemon FILLING 1 lb. chopped raw beef Legg 1 tbsp. matza meal 1/2 onion, grated 1 tbsp. water dash of salt, pepper, cinnamon 1 /2- cup white raisins 1 tsp. cornstarch By cutting 'close to the stem, carefully remove the leaves from a head of cabbage. Put them into a large kettle and cover them with boiling water for 5 or 10 minutes until they are soft. Drain off the water. Mix the chopped meat with the grated onion, the egg, the water, matza meal and season- ing. One-half cup of cooked rice may be added to the meat, if desired. Fill each leaf with a - few raisins and a portion of meat mixture in proportion to its size. Fold over the ends of the leaf and roll. Cut the onion fine and place in a kettle together with the tomatoes, lemon juice, sugar, syrup and seasoning. Put in the cabbage rollg, open end down, add a cup of water and simmer slowly for at least 11/2 hours, basting occasionally. The cabbage should be tender and brown. Thicken the sauce with 1 teaspoon of cornstarch, * mixed with a little cold water * and cook for 10 minutes longer.
