Confusion is caused by
the designation "non-
dairy" which appears on
many products that are
actually dairy and should
not be used at meat meals
by those who observe
kashrut. The U.S. De-
partment of Agriculture
considers "dairy" only
products that contain
butter fat. Other milk
products, which contain
no butter fat, are re-
garded by the USDA as
"non-dairy."
The chief culprit here is
the ever-popular coffee
whitener, labeled Non-
Dairy Coffee Creamer.-Most
of these products contain
sodium casinate, which is
the protein derived from
milk. Not only is the prod-
uct dairy, but in many
cases, it also contains mono-
and di-glycerides, which are
meat derivatives, and is
therefore treife.
One should not assume
that if a product is marked
"kosher" and is called
"non-dairy" that it is neces-
sarily pareve. It may be ,
kosher, but dairy, and
therefore not to be used at
meat meals.

Rabbi Benjamin Shan-
dalov, admintrator of the
Chicago Rabbinical Coun-
cil, says that many orange
juices, generally regarded
as pareve, are actually
dairy products and should
not be used at meat meals
by kashrut observant
Jews. The reason for this is
that many fruit juices are
produced by dairies and the
juices are pasteurized in
machines that are other-
wise used for processing
milk and other dairy prod-
ucts.
While some companies
pasteurize the fruit juices,
others pasteurize the water
which they mix with the
frozen juice concentrates. In
either case, these juices are
definitely dairy and should
not be used at meat meals.
This applies to all pas-
teurized fruit juices.
In Detroit, fruit juices of
the Detroit Pure Milk Co.
(orange and grapefruit
juice) are pareve and may be
used at all meals because
they are pasteurized at a
plant (Michigan Beverage
Co.) which does not process
any dairy products at all. 1981 Wolf Prize
