quently when its presence is

its popular name, but by

Gelatin is a colorless,
brittle protein formed by
boiling specially-prepared
skin, bones and connective
tissue of animals. It is
widely used in foods and
drugs. It is a non-kosher
product because it is derived
from swine or other non-
kosher slaughtered animal.
The problem with gelatin,
from the point of view of
Jewish dietary law, is that
whereas other non-kosher

WARNING

The Jewish News has
a normal deadline of
noon Monday, Feb. 15,
for local news and dis-
play advertising to ap-
pear in the issue of Fri-
day, Feb. 19. However,
there will be no mail de-
livery Monday, Feb. 15.
Material should be
mailed early or hand-
delivered to comply
with the deadline.

Ironically, because gela-
tin is very powerful and is
therefore used only in min-
ute quantities, the U.S. De-
partment of Agriculture
does not require that its
presence be noted in the list-
ing of ingredients of many
products that contain the
forbidden substance.

It is widely used in hard
and soft-centered candies,
marshmallows, ice cream,
sour cream, whipped top-
ping, yogurt and other dairy
products, pie fillings, cus-
tards, puddings and other
products which require a
stiffening agent.

It is also widely used as a
filtering agent for fruit
juices that are clarified.
(Fruit juices are normally
cloudy, since they contain
fruit pulp. If they are mar-
keted in a clear form, such
as apple and cranberry
juices, and wines, in all
likelihood they have been
filtered with gelatin, a proc-
ess called clarification.)

The conclusion drawn
from this situation is that
these products should be
used by the kosher con-
sumer only when they are
manufactured under
conscientious rabbinical
supervision. It must not
be presumed that the ab-
sence of the word "gela-
tin" from the list of ingre-
dients on a product is a
guarantee that the prod-
uct is free from gelatin.
It is interesting to note

that gelatin is called by
different names in different
products. In many dairy
products, it is referred to as
"Vitamin A Palmitate." In
many cases, non-kosher
gelatin often appears in a
listing of ingredients, de-
ceptively, "as K Gelatin."
At the present time, there is
no such thing as a "kosher
gelatin." Likewise, non-
kosher food substances
often appear as "stabiliz-
ers," "emulsifiers," and
"softeners" (especially in
chewing gums).
For complete information
concerning these and other
matters relating to kosher
foods, one should consult an
Orthodox rabbi or Kashruth
Council. The Metropolitan
Kashruth Council may be
