Potato Latkes
By NORMA BARACH
(Copyright 1981, JTA, Inc.)
2 lbs. potatoes
1 large onion
2 eggs
1 /4 tsp. pepper
1 tsp. salt
3 tbsps. matza meal
1 /4 tsp. baking powder
oil for frying
Peel and cut up potatoes
and onion. Place an onion in
blender with some cold water
(making sure there is onion
with each batch of potatoes
you grate so it does not turn
black) and grate. Drain the
water well. Mix the remaining
ingredients except oil in the
- blender. Then mix potatoes
and onions with other mixed
ingredients.
Pour about 1 inch of oil in a
large skillet and make sure it is
very hot. Drop the pancake
batter by tablespoonfuls into
the hot oil. Fry until golden
brown on each side. Serve
immediately with sugar and
cinnamon or sour cream.
The purest and most
thoughtful minds are those
which love color the most.
