Now owned and oper- ated by Jack Peltz, the 'Mill' is recognized as an histori - cal building by the Depart- ment of the Interior. It was completed in 1837, the same year Michigan became a state, by Colonel Peter Van Every. "The original lumber was white oak, white pine and black walnut — all hewed and finished by hand. The 'press' will hold 120 bushels of apples at a time, is rated at nearly 90 tons of pressure and was shipped from Europe in the early part of the 19th Century. It was originally operated by water power (you may still see the wheel behind the mill) but, about 12 years ago, because of flood condi- tions, the mill was changed - over to motorized power. "The Franklin Cider Mill has been a trip-target for sc- outs, seniors and families for many, many years. It opens on the Labor Day weekend and will close on the first Sunday in De- cember. Hours are 9 a.m. 'til 6 p.m. Here you can meet Jack in his shop coat, work- ing side by side with his em- ployees. Some have been with him since the '50s at the House of Foods at Seven Mile and Schaefer. in De- troit. You can see a film, starring Jack and his em- ployees, showing some of the mill activities, watch the press being loaded with apples and see the pressure squeeze the juice from the 120 bushels of apples — juice which emerges white and, after a process of filter- ing emerges, through faucets and into jugs of all sizes to a gallon, in that familiar golden-brown cider. The golden color is the result of fermentation and oxidization. "Fresh cider served up with freshly-made spiced donuts is the object of the visitors but you can pur- chase fresh apples, honey, home-made maple fudge, jams, jelly, fruit cake; cheeses, beef stix and other delicacies.
