... at Topinka's Country
House on W. Seven Mile and
Telegraph ... put together
by Billy Rose, appearing
there with his quartet ...
Tuesday throough Satur-
day.
The Gypsy Festival will
have a 25-piece gypsy or-
chestra, including Ziggy
Bela on violin and Gus Hor-
vath on cymbalum ... Ita-
lian singer Enricco La Ricca
. and opera songstress
Jan Rae ...Strolling dinner
music will be from 7 to 9
p.m. . .. and showtime at 9
p.m.
Billy has been putting on
these Gypsy Festivals since
back in the Black Knight
days with the late Artie
Nelson . . . He presented his
first solo production in 1973
at Vargo's ... and it's a big-
gie every year.
There's a dance floor now
at Topinka's ... with the
Billy Rose Quartet playing
tunes people remember him
by ... old songs, new songs,
Latin songs ... pops, stan-
dards, jazz ... everything
for easy listening and danc-
ing ... "Just In Time,"
"Feelings," "Down In
Brazil," "If She Believes In
Me," etc., etc. in a huge re-
pertoire of melodies ... All
members of the quartet, son
Chris on drums, a chip off
the old block with his solo
song stylings, Rudy Golde,
bass, and Billy Marr, piano,
all join in with four-part
harmony on many songs
played by them ... It used to
be Billy "Baby Face" Rose
many years ago ... but he
looks better and sounds bet-
ter than ever.
ONE OF THE newest of
the current Top 40 rock
groups to hit the Detroit
area, Paradise, is at Blar-
by's on Van Dyke in Warren
. providing a tasty ba-
lance of the hits of the day
along with a nice amount of
laid back rock.
IT STARTED OUT with
10 chefs across the country
being invited to test for
their highest international
degree possible ... that of a
Master Chef ... Eight ac-
cepted ... and five of them
made it through the-point
system for after 10 days of
intensive testing through
everything from French
cookery to Oriental cookery
to tableside cookery to bak-
ing to nutrition and dietary
health aspects ... even bar
tending, sanitation, man-
agement, purchasing and
receiving, menu planning
... and dining room man-
agement that includes wine
service among other super-
visions.
Highest score was
reached by Chef Milos
Cihelka of the Golden Mus-
hroom, 10 Mile and South-
field ... in the first time the
testing has been held in this
country . .. sponsored by
the American Culinary

Federation at the Culinary
Institute of America in
Hyde Park, New York ..
where three European mas-
ter chefs flew in to adminis:
ter and judge a most in-
teresting segment of the
examination.
Each competing chef was
given a mystery basket of
food stuffs ... and told to
prepare a complete. menu
and meal for 10 people,
using only the food in the
basket ... Chef Milos' main
course was a favorite dish
served at the Golden Mus-
hroom ... Veal Medallion
California.
"Besides being a culinary
artist," says Chef Milos,
"the chef of today must also
be a good manager and
apply sound management
principles. That is why this
test, although extremely
difficult to accomplish, was
also a great learning ex-
perience."
