ter told you some time be-
fore you stormed out at
10:30.
2. In stating we were out
of four of six entrees, you
cleverly neglected to add
that we were out of the low-
est priced entree chicken,
which four of you had or-
dered.
"3. We are not a produc-
tion• restaurant with unli-
mited supplies of pre-
prepared food. Because of
our concern with freshness
it is possible that we will
run out of a listed item —
especially at Saturday's
second sitting — the last of
the week. Since we are
closed Sunday and Monday,
left-over items such as
Chicken Breast with puff
pastry have to be given to
the staff as they could not be
carried over to Tuesday.
"4. As you told me, you
were overly hungry and
grumpy since you were not
used to dining so late. You
attacked the waiter on arri-
val and said he had a bad
attitude because he could
not produce an anchovy
olive. This was only the sec-
ond request for an anchovy
olive in 31/2 months.
"5. As to our prices, we
have never claimed to be in-
expensive, but we give ex-
cellent value. The fixed
price five course meal runs
$21.50 to $29.50 depending
on the entree — $21.50 for

chicken to $29.50 for Lobs-

Feuillete. Our average
check with dessert as a sixth
course, cocktails, wine, cof-
fee, or whatever is ordered
is $39.50 with tax and be-
fore tip. By all industry
guidelines we should be $5
higher.
"6. Had you ordered other
more expensive entrees
than chicken, rather than
storming out, you would
have only been charged for
chicken in conformity with
our house policy.
"We strive for perfection
and try to improve each
week. We are not, of course,
perfect. I hate having un-
happy customers. We are
accustomed to people raving
about our food, service and
decor and have never had
any other incident of this
kind. Therefore, if you or
any of or all of your party
would like to dine at The
Lark on a week night when I
could schedule a table at
your normal dining time, I
would be pleased to offer
you complimentary dinners
as my personal guests."
Sincerely,
James David Lark
