Chili made with fresh
vegetables and ground veal
is less fattening than the
traditional chili. It is a good
all in one dish that can be
cooked on top of the stove in
a little more than an hour. It
can be served plain or on top
of rice for a different twist.



1 lb. ground veal
cup chopped onion
1 clove garlic crushed
1/2 cup chopped celery
1 /2 cup chopped green pepper
1/4 cup chopped red pepper
1 bay leaf
1 tbsp. chili powder
4 cups diced tomato
1 cup hot water
1 beef bouillon cube
1/2 tsp. salt
1/4 tsp. oregano
2 tsp. sugar
Brown veal, onion, peppers
and garlic in a little oil. Add
celery and remaining ingre-
dients and cook uncovered
over a low heat for about an
hour. Stir occasionally. Serves
4.

the May 18 issue of Time
magazine.
Balberman's story con-
