try Club on Groesbeck and
16 Mile . . . Keith and Gary,
who went to Germany to-
gether in 1980 for the Culi-
nary Olympics, will ply
their trade at the Hillcrest
Saber Room . . . All three
are former Jacques' chefs
. . . Keith and Gary worked
together.
Taking Keith's place as
chef at the Benchmark in
Michigan Inn is excellent
food stylist Jim Meyers who
opened Au Sable Room at
Shiawassee Hotel (now
Sheraton-Southfield), was
at the Trio and like Keith,
was also at Jacques'.
NUMBER 21 in the
chain of Chuck Muer res-
taurants opened recently is
Eastside Charley's across
from Eastland on Vernier.
The former Antonio's, al-
though one would never,
ever believe it . . . Whereas
the former almost 300-
seater Italian eatery had no
windows, there are glassed
apertures all around .. .
Bright lamps have replaced
soft, sometimes dingy lights
. . . and light wood has
taken over for dark oak.
The name Chuck Muer is
magic . . . This was the first
night . . . and already over
an hour before opening,
people were standing in line
to get in.
Dining room manager
at Eastside Charley's is
gent many northwest
folks know . . . Bo Grzecki
. happy, knowledge-
able and efficient former
dining room manager at
Bloomfield Charley's ...
and at Diggers where he
was dining room man-
ager and kitchen super-
visor . . . General man-
ager is eager-to-please
Joe Gerbino.
Although we didn't have
any, one of the persons at
our table was brought fish
and chips . . . served to him
wrapped in a London
Gazette . . . Corporate
Executive Chef Larry Pag-
liara has done a masterful
job for Chuck . . . and
whenever a place is to open,
he not only trains the
kitchen help thoroughly .. .
but is also with them on
opening night . . . giving
confidence and making sure
what they do is the C.A.
Muer way of doing things.
This was the first night
ever as a waitress for Lisa
Leggio . . . and excellent
training took away a lot of
the nervousness allowing
her to give that beautiful
smile . . . There are waitres-
ses and waiters at Chuck's
places . . . like John Ure
working so competently
with Lisa on opening night
at Eastside Charley's.
There was the usual first
night hustle and bustle .. .
but with the same good effi-
ciency and food for which
Chuck has become noted.
Perfect freedom is as
necessary to the health and
vigor of commerce, as it is to
the health and vigor of citi-
zenship.
