A rice pudding can be used as a side dish or dessert. 2 cups cooked rice 6 eggs 11/2 cups milk 1 lb. cottage cheese 1 /2 cup.white raisins 1/2 cup chopped walnuts 1 cup sugar 1 1/2 tsps. cinnamon 1 cup canned peach slices, drained 1 to 2 tsps. butter. Combine all ingredients ex- cept peaches and mix well. Put into a well greased 2 1/2-quart casserole. Arrange peach slices on top, dot with butter. Bake at 350 degrees for VA hours or until brown. Serves eight.
