Carrots
in Mint Sauce

1 pkg. carrots, sliced in thin
circles
2 tbsp. butter or margarine
1 tsp. potato starch
1 tbsp. sugar
1 tbsp. shredded mint leaves
1/3 cup water
1 /2 tsp. lemon juice
Cook carrots in water until
tender. (Canned or frozen car-
rots may also be used.) In a_
small saucepan, melt the mar-
garine or butter. In a small
bowl, blend the potato starch
with the sugar. Slowly add the
water and mix well. Add the
lemon juice, and mint leaves.
Mix the potato starch mixture
with the melted margarine.
Pour sauce over carrots and
heat until it is all hot. Serves 6.
