Baked Brisket

1 large flat cut brisket with fat
well trimmed
1 bottle kosher Concord grape
wine
1 /2 lb. dried apricots
1 /2 lb. dried prunes
1 tsp. rosemary
1 tsp. thyme
1 tsp. garlic powder
Place brisket in oven-proof
glass dish and score fat side in
diamond shapes with sharp
knife. Sprinkle with garlic
powder. Pour wine over meat
(fat side up) to cover half of
meat. Add rest of ingredients
except fruit.
Place in 450-degree oven
until fat is browned. Turn oven
down to 300 degrees, and
cover dish with aluminum foil.
Continue baking about 2 1/2
hours or until meat is fork ten-
der, taking care to baste with
wine occasionally and to keep
level of wine halfway up side of
meat. Add fruit to wine and
bake last 30 minutes. Drain
wine sauce and mix 2 tsp.
cornstarch with
1/4 tsp
cornstarch with 1 /4 cup cold
water. Add to sauce and bring
to boil, stirring all the time.
This is to be used as gravy.

resolution requesting the
state lesiglature to allocate
$125,000 for the first year of
a two-year statewide project
to prepare course material
and in-service teacher
training courses for the
teaching of the Holocaust as
part of the education de-
partment's revised secon-
dary school social studies
curriculum.

1 tbsp. red wine
Grated rind of 1/2 lemon
1 /2 cup grated carrots
2 to 3 tbsp. potato flour
1 cup sugar
4 eggs, separated and well be-
aten
1 cup chopped almonds
Beat sugar and yolks of
eggs until thick. Add carrots,
almonds, lemon rind and wine.
Beat well. Fold in egg whites.
Pour into greased dish, and
sprinkle top with potato flour.
Bake one hour until brown.
Note: This is to be served
along with brisket and green
vegetables, instead of
potatoes.
