Chuck Formosa still heads the all-new, enlarged and modern-style kitchen . . . We had a piece of white fish there worthy of raving about . . . not a single bone . . . and delicately but firmly lifted onto the fork while its skin remained on the plate. The Farmer's-Style ap- petizer at the salad bar (radishes, cucumbers and tomatoes in a de- lightful dressing), salad made by Donna from the salad bar, garlic bread, mushroom barley soup and Chuck's crispy cot- tage fried potatoes. The evening was like a New Year's Eve . . . Every seat was filled . . . and people were standing three deep at the bar. Carl Steger's dinner music proved ever more his ability as a pianist . . . The ripplings of his fingers pre- sented a well-balanced array of melodies to please everyone . . . as he tickled the keys with elaborate de- xterity. IT'S BEEN MANY years since Billy Rose and the Gypsies played in the back room at Grecian Gardens . . . Now there's live music again on Monroe Street. Jim Constand has re- opened "The Back Room" at his Grecian Gardens for public enjoyment of his fine Greek food plus music and dancing waiters . . . every Thursday and Friday eve- ning. Jim, also owner of Jim's Garage, bought Grecian Gardens two years ago . . . At the time, the restaurant was as well known for the illegal back room activities conducted after hours by the former owners as it was for serving good Greek food .. . Jim gambled and bought it, taking a low profile in creating any new awarenesses about the res- taurant . . . Any inherent frustrations were tempered by the knowledge that once the heat died down, the famous bill of fare and the true Greek tradition of Gre- cian Gardens would . come back into focus . . . All he needed was time and pa- tience .. . The two-year waiting period wasn't too difficult . . He had the support of a mul- titude of regular customers . . . lawyers, doctors, busi- ness and political leaders, judges, other restaurant owners, famous TV and newspaper personalities and popular figures from the world of sports. Gino, a musician who in Greek circles is considered among the best, heads up the bouzouki group .. .
