Here are some samples: CHEESE AND EGG SOUFFLE 1 /2 lb. sharp cheddar cheese 1 /8 lb. margarine or butter 8 slices bread 6 eggs 2 cups milk salt and pepper to taste Trim crust and cube bread. Grate cheese coarsely. Beat eggs well. Add salt, pepper, milk and melted butter. Alter- nate bread and cheese in 2-quart casserole that is but- tered. Pour liquid over all and refrigerate overnight. Next day, bake 1 hour at 350 de- grees. Serves 8 to 10. Very good reheated and with a sauce of sour cream mixed with paprika. BROCCOLI SOUP 2 tbsps. butter 2 stalks celery, with leaves 1/4 cup chopped onion 1 bunch broccoli (about 1 lb.) 3 vegetable bouillon cubes dissolved in 3 cups boiling water 1 cup milk salt and pepper to taste Gently cook celery and onion in butter until wilted. Trim tough stem ends off broccoli and cut into small pieces. Add to pot along with vegetable broth, salt and pep- per. Bring to a boil, cover and cook over medium heat until broccoli is tender, about 20 minutes. Puree in electric blender. Return to pot, stir in milk and heat. If soup is too thick, add more milk and ad- just seasoning. Serves 6. NY Leader Cited NEW YORK — Morris L.
