Ruth Wagner, Pat's hos- tess supreme at the front door, pleasant, congenial and always cooperative, has been at Excalibur since it opened. One of the area's top chefs is at Excalibur . . . Martin Wilk . . . who started at the London Chop House when 14-years old as an appren- tice under then head chef Pancho Velez . . . Pancho left about four years later and Martin had worked himself up to sous chef under Milos Cihelka . . . left to be with Doug Diehl at Doug's Body Shop . . . and has been at Excalibur about three years. Martin will make any- thing if ingredients are in the kitchen . . . even peanut butter sundae . . . Menu listings aren't the only things he'll pre- pare . . . A lot of items Martin has are spe- cialties as yet not listed . . . The waitresses usu- ally know what these specialties are. And if a person wants his or her food cooked differ- ently than the menu de- scribes it will be done . . . Martin gets many requests also for items vegetarians can eat. The Billy Kallao Trio with songstress Kathy Locke continues to make wonderful music . . . Billy on drums, Vince Shane, piano and Tony Rose, bass . . . are at the always- crowded piano bar. Excalibur under the own- ership of Pat Archer and managerial know-how of Nick Cerice continues to steadily roll along . . . If possible, Excalibur has even gotten better. It is one of the very few dining spots in Michigan today with an oxygen tank . . . and about 10 employees who know how to administer the oxygen, give artificial re- cusitation or alleviate choking . . . doing what- ever necessary until a 911 call has been answered. There are wonderful facets . . . and the oxygen especially should really be a mandatory thing in all res- taurants. Excalibur, more of a fam- ily restaurant than people would surmise, is now open Sundays 4 to 11 . . . and open this year for Thanksgiving dinner . . . Reservations are limited . . . and will probably go very fast.
