Turkey Recipes

ORANGE GLAZED
TURKEY ROLL
3 lb. turkey roll
1/2 cup frozen orange juice, un-
diluted
1/3 cup brown sugar
1 cup water
1 tbsp. flour
Roast turkey roll tightly
wrapped in aluminum foil at
400 degrees for two hours. Mix
juice and sugar. Baste turkey
with juice and roast one-half
hour longer or until turkey is
tender. Baste two times during
the half hour. Remove turkey
from pan. Remove drippings.
Mix water slowly with flour.
Add to pan drippings in a small
pot, stir and bring to boil. Use
as a gravy over sliced turkey.
Slice turkey and serve. Serves
5-6. Can be prepared ahead,
sliced and heated in preheated
gravy until hot.

TURKEY SOUP
The following soup can be
frozen. To serve let it defrost
slightly, put in a pot, bring to
boil and let simmer for a few
minutes.
2 turkey wings
turkey giblets
3 medium carrots (cut in
thirds)
1 onion (whole)
2 stalks celery, cut in thirds
salt and pepper to taste
3 quarts cold water
In a 5-6-quart pot, add all in-
gredients. Bring to boil. Re-
move scum if any exists. Cook
on simmer, covered, for 21/2
hours. Serves 10.
