3 lbs. flanken cut into 3-inch
pieces
4 large carrots, cut in rounds
8 ozs. dry prunes
6 large sweet potatoes, quar-
tered
1 /4 cup raisins
1/2 cup honey
1/2 cup brown sugar
1 /4 cup orange juice
In a Dutch oven, sear the
flanken. Add vegetables and
prunes. Mix honey, brown
sugar, orange juice and
raisins. Pour over the meat
and vegetables. Cover and
bake at 325 degrees for 2-3
hours. Baste as needed, add-
ing a little - more orange juice if
necessary.
