Ancient Samaritan Cooking Unchanged;
Strictly Adheres to Kashrut Observance
From Israel Digest
JERUSALEM — Almost
everyone has heard the
legend of the Good Samari-
tan, who two millenia ago,
in a Middle East plagued by
war and brigandage, stop-
ped on his way to aid a plun-
dered traveller.
The fact of the matter is,
the Samaritans still exist,
and are as hospitable as
ever. Divided into two
communities, one in Holon
and one in Nablus, they are
probably the only group in

relatively recent innova-
tion, old eating habits have
been slow to change, and no
Samaritan husband would
consider consuming tomor-
row the same food he ate the
day before.
In addition, unlike many
of their Israeli neighbors in
Holon, no Samaritan wife
would dream of preparing a
week's worth of dinners in
advance and cramming
them into the freezer.
Preserved foods are
also rare, and only with
difficulty have Samari-
tans grown accustomed
to the taste of artificially
fattened local poultry.
Samaritans, however,
have not been completely
opposed to the introduction
of new recipes into their
menus. The widespread use
of different types of grains is

a direct result of the famine
years of World War I, when
grains were the only source
of subsistence available.
The amazing develop-
ment of new agricultural
crops in Israel has also in-
troduced a wider range of
foods, each of which has
been adopted and trans-
formed in a unique way.
These inclut,de avocadoes,
strawberries, and cabbage.
Much of Samaritan cook-
ing has also been adopted
from typically Arab dishes,
but here again, subtle
changes in the preparation
have been introduced to
conform to dietary laws.
