In many instances this is construed as a bit of laziness on the chef's part .. . The omelette I did have from Bijou's menu, with chicken livers, was very good even though the livers were on top and not inside its fold . . . If you like a very bland salad, have their house dressing . . . and be- ware of bones when eating fish . . . The waiter debones it for you at tableside .. . without much light.
