FARMBROOK MEDICAL BLDG., SUITE 1-101 28929 Telegraph, Southfield, Mich. 48034 Tuna Knishes By NORMA BARACH (Copyright 1980, JTA, Inc.) 41 /2 cups unseasoned mashed potatoes instant mashed potatoes may be used, omitting butter and salt) 1 cup matza meal 1/2 cup potato starch 3 eggs, beaten 2 tbsps. soft butter or pareve margarine 1 tsp. salt 1 /8 tsp. pepper Additional matza meal Combine mashed potatoes with matza meal, potato starch, eggs, butter, salt and pepper. Mix well and form into a soft dough. Makes 24 pat- ties, using ,/,4 cup dough for each, and coat both sides with matza meal. Place 12 of the patties on two greased baking sheets (6 on each). Flatten dough slightly with fingers to form thin patties and spread each with 1/3 cup tuna filling (see be- low), leaving a border of about 1/2 inch. Top each with a sec- ond patty and pinch edges to seal. Bake in a 350-degree oven for 20 minutes on one side; turn and bake for 15 minutes longer. (Knishes may also be fried in salad oil, a few at a time, turning once when underside is golden brown. Frying time is about 8 to 10 minutes.) Yields 12 large knishes; 6 servings. TUNA FILLING 3 cans (61/2 or 7 ozs. each) tuna in vegetable oil 1 pkg. (10 ozs.) frozen peas, thawed 1 can (3 or 4 ozs.) chopped mushrooms, drained 1 egg, lightly beaten 1 tbsp. dried parsley flakes Flake tuna and combine with remaining ingredients.
