The American Heart
Association has a hardcover
cookbook available from
local Heart Association
chapters or bookstores for
$12.95. This fish recipe is
from the book:

1 lb. cod fillet, cut into 2-inch-
square pieces
4 medium potatoes, quartered
4 medium carrots, cut into
2-inch pieces
1 tbsp. lemon juice
1 tbsp. mayonnaise
freshly ground pepper
1 /2 cup shredded Mozzarella
cheese
1 to 2 tbsps. chopped parsley
Slightly grease a 13x9-inch
baking dish. Put fish pieces
into the dish and sprinkle with
lemon juice. Place carrots and
potatoes between pieces of
fish. Place dabs of mayon-
naise and pieces of potato
over the fish. Season with
pepper. Sprinkle cheese over
all. Cover and bake at 375 de-
grees for 40 minutes. Serve
garnished with chopped
parsley. Serves 4.
