"Cooking Without Your
Salt Shaker." The book,
which sells for $5, has a
handy table of substitutions
which enables you to reduce
your usage of sodium,
cholesterol and fat. It also
has a chart with a calcu-
lated food value for every
recipe in the book as to
calories, carbohydrates,
protein, fat, cholesterol, etc.
Following are recipes from
the cookbook:

Lemon Sherbet
11/2 tsps. unflavored gelatin

2 tbsps. cold water
2 cups hot skim milk
3 /4 cup sugar
1/2 cup lemon juice
1 tsp. grated lemon peel
1 egg white
Sprinkle gelatin over cold
water in a saucepan and allow
to stand five minutes. Add hot
milk and sugar. Heat, stirring
constantly until gelatin is dis-
solved. Chill until thickened to
the consistency of unbeaten
egg white.
Gradually stir in lemon juice
and lemon peel. Mixture will
appear separated at this point.
Place in a shallow pan in
freezer until mixture is frozen
at the edges. In a separate
bowl, beat egg white until it
forms soft peaks. Beat par-
tially frozen lemon mixture
until fluffy but not melted.
Gently fold in egg white.
Freeze until firm. Serves 6.

Strawberry
Sherbet

from

1 tbsp. (1 envelope) unflavored
gelatin
1 /4 cup cold water
1 cup hot water
1/2 cup sugar
2 pkgs. (10 ozs. each) frozen
strawberries, thawed, or 2
cups sliced fresh strawber-
ries, sweetened to taste, and
allowed to stand 2 hours
3 tbsps. lemon juice
Sprinkle gelatin over cold
water in saucepan and allow to'
stand 5 minutes. Add hot water
and sugar. Heat, stirring con-
stantly until gelatin is dis-
solved. Remove from heat and
add undrained strawberries
and lemon juice. Place in shal-
low pan in freezer until mixture
is firm at the edges. Beat with
electric mixer until well mixed.
Return to freezer until firm.

Arabs Sponsor
`Rights' Meeting

A meeting on behalf of the
"Palestine Human Rights
Committee" was held at the
Wayne State University
Student Center Building on
Saturday, during the vaca-
tion period between winter
and spring terms. The meet-
ing was scheduled as a dis-
cussion of "social issues."
The meeting was spon-
sored by the WSU Organ-
ization of Arab Students,
and reportedly involved
several mayors of West
Bank Arab towns. Rep.
John Conyers (D-Detroit)
was also reported to have
spoken at the meeting.
Rep. William Brodhead
(D-17th District) queried
the Justice Department last
October to determine if the
Palestine Human Rights
Committee was acting as a
foreign agent. That investi-
gation is reportedly con-
tinuing.
