athletes in the Olympics.
This will be the first time
that kasha has been part of
the Olympic menu.
The inclusion of kasha,
roasted buckwheat kernel-1,
is largely due to the nutri-
tional value. Buckwheat
contains twice the amount
of B vitamins as wheat. It is
also a rich source of potas-
sium, phosphorus, and ru-
tin, a substance believed to
be of aid in preventing ar-

KNISHES
PASTRY FOR KNISHES
2 cups flour
1 tsp. salt
1 h cup shortening
4-5 tbsps. cold water, milk or
egg "wash"
(Packaged pastry mix may be
substituted.)
Combine flour and salt. Cut
in shortening until pieces are
the size of peas. Sprinkle cold
water over flour, a tablespoon
at a time, until dough forms a
ball when pressed together.
Divide dough in half; roll out
on lightly floured pastry cloth
or board until dough is 1/4-inch
thickness. Cut Into 3-Inch
rounds. Place a teaspoonful of
filling in center; moisten edge;
fold over; seal edges. Place on
baking sheet. Brush top with
milk or lightly beaten egg di-
luted with 1 tablespoon water.
Bake at 3750F for 10-12 min-
utes or until golden brown.
Serve warm with mustard
and/or other spicy dipping
sauces as appetizers. Makes
36 turnovers.

/4 cup cooked kasha
1 cup onion, chopped
2 tbsps. butter or margarine
dash of pepper
Saute onion in butter or
margarine; add kasha and
seasoning. Use to fill turn-
overs. Makes about 2 cups fil-
ling.

EGG FILLING
3/4 cup cooked kasha
3 hard-cooked eggs, chopped
3 tbsps. pickle relish
2 taps. prepared mustard
dash of pepper
Combine all ingredients and
use to fill turnovers. Makes
about 2 cups filling.

Boston University and a
master of education degree
with distinction in counsel-
ing psychology from Boston
College. Her fiance earned a
BA degree with honors in
political philosophy from
James Madison College at
Michigan State University,
a general certificate in
Judaic studies from Haim
Greenberg College in
Jerusalem and a master's
degree in Jewish communal
studies at Brandeis Univer-
sity. He is pursuing doctoral
studies in adult education
at Boston University. A
