Gradually add combined flour, oats and salt, mixing well after each addition until dough Is smooth and soft. Divide dough Into 3 equal portions. Pat out each portion on wax paper to form 5-Inch circle; wrap securely. Chill at least 3 hours or overnight, as desired. For cheese filling, beat to- gether all ingredients until light and fluffy. Heat oven to 375 degrees. Before rolling dough, let 1 cir- cle of dough stand at room temperature about 5 minutes Generously sprinkle pastry board or cloth with confec- tioners sugar. Carefully roll out dough to 1/4-Inch thick- ness, pressing dough together at edges if cracks appear. Cut out 3-Inch circles with cookie cutter. Place circles on greased cookie sheet; top each with 1 level measuring teaspoon cheese filling, spreading slightly. Gently fold over 3 edges of dough to form triangle, pinching edges to make corners (dough may crack slightly). Repeat with remaining dough. Bake at 375 degrees for 10 to 12 minutes or until edges are light golden brown. Cool 1 minute on cookie sheet; re- move to wire cooling rack. Cool completely; sprinkle with confectioners sugar, if de- sired. Store In tightly covered container In refrigerator. Makes about 21/2 dozen cookies. VARIATION: For poppy seed filling, combine one 12-oz. can poppy seed filling, 1/2 cup chopped walnuts, 1 table- spoon honey and 2 teaspoons grated lemon br orange peel, mixing until well blended. Store poppy seed-filled cookies in loosely covered container at room tempera- ture.
