Potato Latkes

With Hanuka just around
the corner perhaps you'd
like to try these low choles-
terol potato latkes. The re-
cipe comes from a cookbook
available for $6 from the
United Order of True Sis-
ters of Cleveland No. 30,
2655 Lee Rd., Cleveland
Heights, Ohio. There are
several pages of low choles-
terol recipes featured.

2 cups grated raw peeled
potatoes
4 egg whites
1 tbsp. flour
1 1/2 tsps. salt
Va tsp. pepper
veg. oil for frying
Grate potatoes in blender.
(Use some water in the blen-
der.) Remove and drain off ex-
cess liquid. Put 1 12 cup
potatoes, egg whites, flour,
salt, pepper back In the blen-
der and blend two minutes.
Combine with remaining
potatoes. Batter will be thin.
Fry thin pancakes in hot oil
until golden brown on both
sides. Serves 6-8.
