Place beef, onion, garlic,
carrots, parsnips and season-
ings in a large soup pot. Cover
with cold water and bring to a
boil Reduce heat, cover and
simmer for one hour. Skim off
fat. Add remaining vegetables,
seasonings and more water if
necessary. Cover and simmer
for 45 minutes more. Check
seasoning. Serve . hot. Makes 8
servings.
