Her formal educational background is quite limited, but a solid foundation for the self-teachings . . . Carol took only three-week courses at the Culinary In- stitute, Hyde Park, N.Y. . . . classical French, cuisine minceur and charcutiere (pate, sausages, galantines) . . . She conducted a seminar at the Culinary Institute on women in the food service industry. Carol's dad was a chef, and when he died in 1962, she came back home from New York to help in the family restaurant . . . That's where her basic's were learned . . . and everything seemed to come natural. After the restaurant was sold. in 1971, Carol went to the Village Club for three years ... and her interest in gourmet cooking began ... The Money Tree 21/2 years ... days at Coopers Arms in Rochester ... and nights at Tweeny's in Birming- ham ... She found it too hard working double jobs ... and when con- tacted to be Great Dane's head chef after Duglass left, she took the oppor- tunity . . . and has proven to be one of the finest in her field. Great Dane is owned by Maj. General Roy Marshall with the U.S. Air Force Re- serves . . . and 37 years of service . . . He flew 70 mis- sions during World War II and is also a qualified jet fighter plane pilot . . . Gen. Marshall is the mobiliza- tion assistant to the four- star general who is U.S. tac- tical air commander . . . ad- vising him on all reserve and national guard fighter aircraft operations throughout the U.S. Marge Dargo is day man- ager . . . and John Kehn night manager . . . Night chef is Joseph Salisz . . . and Carol executive chef. Reason for the numbers on the menu is because the original Great Dane chefs were Danish and couldn't read or write English so ev- erything was ordered by number. The Great Dane has been on Northwestern Hwy. since 1967. A 20-MONTH-OLD Ita- lian restaurant receiving many raves from people crops up in the name of Caradonna's between 15 and 16 Mile, on Moravian, near Van Dyke. All dishes at Caradon- na's, even the spaghetti, is homemade . . . and there's a lot of pride in the fresh veal served . . . Everyone there feels it's the best anywhere. According to those who have been to Caradonna's, the decor is elegant and the prices most reasonable.
