FLUFFY MATZA BALLS
3 eggs, separated
3 /4 cup matza meal
1/2 tsp. salt
Beat egg whites until stiff;
then fold in yolks, which have
been beaten with salt. Fold in
matza meal. Let stand five
minutes; then form balls with a
spoon and drop in boiling
salted water or soup stock.
Cover and cook 35 minutes.
(Makes 12 large balla).

TRADITIONAL
MATZA BALLS
2 tbsps. melted fat
2 eggs, slightly beaten
1 /2 cup matza meal
1 tsp. salt
2 tbsps. soup stock or water
Mix fat and eggs together.
Add matza meal and salt.
When well blended, add soup
stock or water. Cover mixing
bowl and place in refrigerator
for 20 minutes. Using a three-
quart pot, bring salted water to
a brisk boil. Reduce flame and
into slightly bubbling water
drop balls from the above mix-
ture. Cover pot and let cook 35
minutes, and serve with chic-
ken soup. (Makes 8 balls).

MATZA BALLS
SELTZER-STYLE
4 eggs
1 /2 cup seltzer
1 cup matza meal
1 /3 cup melted fat
1 tsp. salt
dash pepper
Beat eggs; add seltzer,
melted fat, salt, pepper and
mix well. Add matza meal, stir
and let stand in refrigerator for
about 21/2 hours. Roll into
small balls and drop into boil-
ing salted water. Cook for 45
minutes. (Makes 12 balls).

HUNGARIAN
MATZA BALLS
2 eggs, separated
3 tbsps. melted fat
1 cup matza meal
1/2 tsp. salt
V8 tsp. cinnamon
V2 tsp. ground ginger
1/2 cup hot chicken soup
2V2 quarts salted water
Beat egg whites and put
aside. Beat yolks and melted
fat until blended. Add matza
meal, salt, cinnamon, ginger,
hot soup and mix well. Fold in
egg whites and put in re-
frigerator for 1 hour. Boil water
in three-quart pot. Wet hands
and form walnut-size balls.
