Use Wine in Pesach Recipes
The Kosher Wine Insti-
tute in New York offers spe-
cial Passover recipes utiliz-
ing various wines to add, a
new taste to traditional
foods.
NO-BAKE APRICOT
MATZO BALLS
8 oz. apricots, dried
2 tbsps. matza meal
6 oz. fresh-flaked coconut
1 tbsp. orange marmalade
2 tbsps. Kedem Apricot Cor-
dial
Grind apricots and half of
coconut (in a blender or grin-
der on "grind" setting). Add
one tbsp. of - matza meal to
push out remaining mixture.
Mix marmalade, Kedem Ap-
ricot Cordial and rest of matza
meal together until a smooth
dough forms. Roll into balls,
having rubbed your hands
with matza meal to keep from
sticking. Roll balls in left-over
coconut.
Dried pears may be substi-
tuted, apples or raisins for ap-
pricots. Use Kedem Pear Cor-
dials with pears; chocolate-
cherry, cherry Cordials with
apple or raisins. For a real
treat, make 1/2 apples, 1/2
raisins, with Kedem Amaretto.
Roll into ground almonds.

3/4 cup ground nuts
3 -tbsps. Kedem extra heavy
Malaga Wine
V8 tsp. nutmeg
1/2 tsp. cinnamon
Grind the apple into a bowl.
Grind half of the nuts into
powder and half so that minute
pieces are visible. Add spice
and wine. Mix well.

BOURGUIGONNE
1 brisket or roast (approx. 5
lbs.)
1/4 cup tomato sauce or 2 diced
tomatoes
2 carrots peeled
5 small potatoes with skins
dash of pepper
1 tsp. sugar
2 tsps. garlic powder
2 tsps. salt
2 tbsps. onion powder
1 /3 cup Kedem Burgundy Wine

Put the meat into a plastic
bag or saucepan containing all
the ingredients except the
vegetables. Place in re-
frigerator overnight. 4-5 hours
before dinner put meat into a
350 degree oven in a covered
roasting pan along with the
vegetables (save the remain-
ing marinade). Roast for 3
hours covered. Remove cover
and roast for 1/2 hour till done
to taste.

Dissolve potato flour in to

the sugar and bring to a boil.
Beat the eggs in the top of a
double boiler and slowly pour
in the hot sugar-Kedem Cherry
Cordial and water mixture
while whipping with a wire
whisk. Add the lemon juice in
the same manner.
Fill the bottom of the double
boiler with water and bring to a
boil. Assemble the boiler. Re-
duce the heat so the water con-
tinues - to boil when covered.
Stir constantly until it thic-
kens. Serve hot or cold over
sponge cake or other favorite.
