Glazed Chicken

By NORMA BARACH

(Copyright 1979, JTA, Inc.)

As spring approaches, so
does the Passover holiday,
with all of its special foods. I
believe you'll find this re-
cipe to be an outstanding
main dish for your Seder
'menu.

2 3-4 lb. fryers (whole)
1/2 tsp. salt
% tsp. pepper
1 /4 cup fresh orange juice
1 1/2 tsps. orange rind
1 /4 cup honey
2 oranges (medium) cut in
segments
Place chickens, seasoned
with salt and pepper, in a shal-
low pan. Roast at 375 degrees
for about one hour. Bring
orange juice, rind and honey to
a boil in a small pot. Place
orange segments around
chicken. Brush chicken and
orange segments with
orange-honey mixture. Roast
for 30-45 minutes or longer,
basting as necessary until
chicken is tender. Serves 6-8.
