Let us give you one exam- ple which we always try to remember: "Auntie" Esther Michael, owner of Sheik Restaurant (Les "Gruber of the London Chop House considers it one of Detroit's best restaurants), cries out, "Give me anything but lamb"; to Esther a good steak . . . or a hamburger at Jacoby's or a Coney Island anywhere is a treat. To someone surrounded by Lebanese food these simple,, all-American dishes are exotic — ethnic fare. THUS OUR. SECOND RULE: Think of your guest these have the label "ethnic" attached to them. In fact all of them are ethnic, all of them are exo- tic; it just depends on your frame of reference — your past experience. It's this viewpoint that causes James Beard to rank De- troit restaurants just be- hind those of New York and San Francisco and causes us to rank them in first place in the U.S. What is ethnic — what is exotic? Well, hopefully you're beginning to get the idea. Perhaps the dictionary will' help a bit. Webster's says: "Exotic — introduced from a foreign country — foreign." Ethnic — pertain- ing to races or group of races, discriminated on the basis .of common traits, cus- toms, etc." Use your imagination, pro- vide a different dining ad- venture. In many instances knowing what your guests can find in their home terri- tory and leading them to dishes or surroundings that they cannot easily duplicate at home will greatly in- crease your stature.
