round. Serve this noodle
casserole with a large tossed
salad and a hearty vegeta-
ble soup.

/4 cup butter (melted)
1 onion, chopped
3 tbsps. flour

2 cups milk
1 1/2 tsps. salt
1 /8 tsp. pepper
1 cup ricotta cheese
1 pkg. frozen peas (thawed)
4 oz. grated American cheese
Cook noodles according to
package directions. Drain.
Preheat oven to. 350 degrees.
To melted butter, add onions
and brown until golden. Stir in
flour, salt and pepper. Slowly
add milk, stirring constantly.
As sauce thickens, add ricotta
cheese and stir until smooth.
Add cheese sauce to noodles,
then the peas, and pour into a
two-quart casserole. Cover
and bake for 25 minutes.
Sprinkle American cheese on
top and bake 10 more minutes.
.Serves 6.
