Latke Recipe

A new cookbook entitled
"The Jewish Low-
Cholesterol Cookbook," by
Roberta Leviton, is a well
written kosher book for
those concerned about diet,
heart disease and "Jewish"
foods. It is published by
Paul S. Eriksson and is
available in book stores
throughout the country.
Here is a latke recipe for
Hanuka:

- I cup flour
11/2 tsps. baking powder
1/2 tsp. salt
3 /4 tsp. cinnamon
2 tbsps. sugar
1 cup applesauce
2 egg whites
2 tbsps. skimmed milk
oil
1 cup dry or low fat cottage
cheese
Stir the flour, baking pow-
der, salt, cinnamon and sugar
together. Beat the applesauce,
egg whites, cottage cheese
and milk together. Add the dry
ingredients to the applesauce
mixture and stir until com-
pletely blended. Fry in hot oil
until golden brown on both
sides. May be served with
additional applesauce.
