Rose Naftalin and her
husband operated a small
delicatessen in Toledo,
Ohio, before expanding the
restaurant business in Port-
land, Ore. In the many
years of her experience as
cook and restaurant man-
ager, she gathered a vast
amount of recipes.
Her skills form an im-
pressive book, "Grandma
Rose's Book of Delicious
Snacks, Nibbles, Noshes
and Other Delights" (Ran-
dom House).
She is
, introduced as a
grandma, and it should be
noted that she is also a
great-grandma. That dates
her as .a lady with more than
the ordinary years of ex-
perience as cook and recipe -
creator. Her book proves it.
It is not a kosher book. On
the contrary, it is filled with
non-Jewish, forbidden foods
for the observer of dietary
laws. But there is enough in
the-book to make parts of it
valuable for the kashrut ob-
server.

Hors d'oeuvres
Spread halved pecan nuts
with mashed roquefort cheese
and put together with halved
nuts.
Liver and Apples
broiled chicken livers
small red, apples
margarine
salt
pepper
3-inch rounds of toast
Core apples and slice
1 /4-inch thick. Saute in mar-
garine until almost tender.
Place on each round of toast.
Top with liver. Hold together
with cocktail pick.

ArtichokeS
2 large artichokes
nsp. salt
juice of 2 lemons
Slice off stem to make ar-
tichokes level. Put salt, lemon
juice and artichokes in 1 quart
of water. Bring to a boil and
cook 10 minutes. Remove ar-
tichokes and drain well. Chill
in refrigerator, then serve.
Working a 20-hour day,
Rose never had time to meet
her, most loyal customers. "I
think some of them thought
I was unfriendly and I'm
sorry about that, but I
couldn't stop working to
talk." Ten years later, she
realized that her feet were
slowly giving out, and, with
tears in her eyes, she sold
the business. "I was re-
placed by five chefs," she
smiles. .
But this tiny woman with
the sparkling eyes and inde-
fatigable energy was not cut
out for retirement. While
she ran her well-loved res-
taurant, she never gave out
a recipe --- not even to her
own family. Yet "one day
one of my grandsons called
long distance from Hartford
to get the recipe for cheese
cake," and she decided in
earnest to record the legacy
for her grandchildren.

Avocado Tomato Dip
smooth. Drop from a teaspoon
onto the cookie sheet. Bake for
15 minutes. With a wide
spatula, remove from the pan
while still warm. Servein paper
candy cups. Yield 5 dozen
haystacks.

CASUAL FAMILY
PORTRAITS
2 avocados, well ripened
2 tbsp. lemon juice
2 tbsp. vinegar
1 tomato, peeled
1 /4 cup onion
1/2 tsp. sugar
2 tsp. salt
1 tsp. Worcestershire sauce
Ya tsp. pepper
4 dashes of Tabasco sauce
Peel and pit avocados, then
puree in a blender with the
lemon juice and vinegar. Mix in
the tomato and onion. Add,
seasonings. Cover tightly and
chili. Serve as a dip for fresh or
spiced vegetables. ,
4 squares unsweetened
chocolate
4 tbSp. butter
4 eggs
2 cup sugar' - •
1/2 tsp. Salt
4 cups coconut
11/2 cups blanched almonds,
toasted and ground
2 cups all-purpose flour
Preheat oven to 350 de-
grees. Grease a cookie sheet.
In a small pan, melt the choco-
late with the butter in the oven.
Remove from the oven and
place in a large bowl. Add the
eggs, sugar, salt, coconut, al-
monds and vanilla. Stir until
