Here are some typical Is-
raeli recipes you can pre-
pare in your own kitchen:

EGGPLANT SALAD
1 medium eggplant (1 pound)
2 tbsp. lemon juice
1 crushed garlic clove
fresh parsley
1 /2 tsp. salt
1 /4 tsp. pepper
1 /2 small grated onion
1 tbsp. mayonnaise or
2 tbsp. Tchina (sesame seed
paste) .
Rinse and dry eggplant.
Prick with a fork in a number of
places. Place in roasting pan
in very hot oven and roast for
40 minutes, turning every 10
minutes so all sides become
tender. Remove from oven, slit
skin with a fork and scoop out
flesh into a bowl.
Add lemon juice, garlic
clove, salt, pepper and onion
and mash well. Add mayon-
naise or tchina and blend well.
Place in serving dish, garnish
with fresh parsley and refrig-
erate until serving. Serve with
pita (Arab pocket bread, called
Sahara bread, Syrian bread or
pocket bread).

ORANGE=FILLED CAKE
2 eggs
1 /2 cup sugar
1 cup sugar
21/4 cups flour
1 tbsp. baking powder
1 tsp. salt
1 /4 cup vegetable oil
4 tsp. grated orange peel (from
Jaffa oranges)
- 1 cup orange juice (freshly
squeezed from Jaffa oranges)
FILLING
1 pkg. instant vanilla pudding
4 tsp. orange peel
1 /2 cup orange juice
1 /2 cup water
1 /2 cup whipping cream
Beat egg white until almost
stiff. Add 1/2 cup sugar and
continue beating until stiff: Set
aside;
Mix 1 cup sugar, flour, bak-
ing powder and salt. )Add oil,
orange peel and orange juice
(1 cup). Add egg yolk and beat
entire mixture for one minute.
Fold in whipped egg white.
Pour into a greased baking
pan and bake in a moderate
oven 30-35 minutes or until ai
toothpick inserted in center
comes out clean. Remove
cake from oven and let cool.
Split in half to make two layers.
Combine vanilla pudding,
orange juice (1/2 cup), water
and orange peel of filling and
blend well. Beat whipping
cream until stiff and fold into
pudding mixture. Spread fil-
ling on bottom layer. Replace
with top layer.
