AT Glassman Olds 28000 Telegraph 2 lb. veal 2 tbsps. olive oil 2 medium onions, cut in rings 1 clove fresh garlic 14 cup water 2 tbsps. lemon juice 1/2 tsp. salt Vi tsp. Italian seasoning (a bit more may be added for a spicier flavor) fresh parsley tor garnish In a large, heavy skillet, brown veal In olive oil. Then add garlic and onions and cook until onions are a golden color. Remove garlic and add the rest of the Ingredients (though not the parsley). Cover and simmer, turning meat twice, for about 40 mi- nutes or until veal Is tender. if necessary, add a tablespoon or so more water. Garnish with parsley. Serves 4-5.
