in Kosher Chinese Cook Book
When Bob Grossman
wrote "The New Chinese
Kosher Cook Book" 15 years
ago, he received acclaim for
a unique contribution to the
culinary art.
The book elicited interest,
jubiliation and laughter
from non-Jewish admirers
as well as Jews.
Now available in a re-
vised edition published
by Paul S. Eriksson, the
newness in the title is in
the recipes. There are, for
example, the Szechuan
spicy chicken Met Tze Ah
(Hadassah Egg Roll) and
Hot Pot Gan Eden. Egg
Roll Hadassah is a trib-
ute to the women, as are
the more than 70 more re-
cipes which are a recog-
nition of the women's de-
sire for newness in the
kitchen.
These samples of the
Chinese Jewish recipes pro-
vide an idea of the book's
approaches to cooking
Jewishly via Chinese inspi-
rations:
SPICED EGGPLANT
MIK VAH
2 1-1b. eggplants
A good pinch sugar
3 tbsps. light soy
2 tbsps. wine vinegar
A nice pinch salt
A tbsp. sherry
A tbsp. sesame oil
A tbsp. vegetable oil
5 doves garlic chopped tine
A tbsp. ginger chopped fine
First, Ina steamer you'll put
the eggplants and cook good
until they look like a flat tire.
Let it cool nice while you mix
together the sugar, soy, yin-
egar, salt, sherry, and sesame
oil.
Next, a wok you'll make hot
and put in the oil so you can
cook for a few seconds the gar-
lic and ginger. Then the vin-
egar and soy mish-mash pour
In and boll quick for a minute.
While this is getting cool,
shred up In pieces the
eggplant and on a nice plate
you should put It. Pour over
this the sauce and serve to six
people, one of whom Insists
that eggplant the Chinese
don't have.

ROAST DUCK
FAH BRENT
A nice 5 lb. duck
4 taps. honey
Y4 cup chicken broth
4 taps. sugar
1 tbsp. soy sauce
A pinch salt
Mix together everything but
the duck. In this mixture you'll
soak for an hour the duck.
Then on a rack in a roasting
pan with a little water in the
bottom, put the bird. Place this
in a 350° oven for 2 hours.
Every once in a while you
should baste a little. For the
last 10 minutes( turn up the
oven to high so the duck gets
nice and crisp and brown.
When it's all done, cut the duck
Into pieces and serve with
duck sauce. About. 4 people
should make a meal from this.
If you're among friends,
serve toothpicks after this.

CHICKEN WALNUT
AH MENCH
1 medium size chicken
3 tbsps. soy sauce
2 tbsps. sherry
1 tbsp. cornstarch
1 cup walnuts shelled
6 tbsps. oil
'h cup sliced mushrooms
Va cup chopped celery

6 water chestnuts sliced
14 2 cup bamboo shoots
1 medium onion sliced
142 cup bean sprouts
A pinch salt
V4 cup nice chicken broth
Take from the chicken all the
meat and cut into 14 inch
pieces. Mix together the soy
sauce, sherry, and cornstarch
and soak In It the meat. Blanch
the walnuts and fry in 2 table-
spoons oil so they get brown.
Then you should drain. Now
you'lltake a hot frying pan and
put in 2 tablespoons oil. In this
you'll put all the vegetables
and salt and saute until they
are about half done. Now you'll
take out and put aside. Put 2
more tablespoons oil In the
pan and put In the pieces chic-
ken. This you'll fry for a few
minutes until it's cooked.
When It's ready, you'll put
back the vegetables and on
this pour in the broth and put
In the walnuts. Heat for an-
other 2 minutes and it's ready
to serve.
