Weight Watchers Prints Diet Recipes for Passover

The local Weight Watch-
ers organization has pub-
lished recipes for Passover
in the April edition of its
newsletter, The Thinline.
They include:

CHICKEN STEW
4 oz. onion, diced In large
pieces
Y. tsp. garlic powder
1 bouillon cube, crumbled
21/2 lbs. chicken, skinned and
cut Into pieces
4 medium tomatoes, diced
11/2 cups water
1 cup diced carrots
1 cup sliced fresh mushrooms
Salt and pepper to taste
In a non-stick skillet com-
bine onion, garlic, crumbled
bouillon cube and chicken.
Cook stirring occasionally
until chicken is brown. Add
tomatoes, water, carrots,
mushrooms, salt and pepper;
bring.to a boll; lower heat and
simmer for 45 minutes or until
chicken Is tender. Divide
evenly. Makes 4 servings.
Each serving Is equivalent to 1
oz. limited vegetable, 6 oz.
poultry, 1,4 serving something
extra (1/4 bouillon cube) and 1
cup vegetables.

APPLE PUDDING
4 medium eggs, separated
4 medium apples, pared, cored
and grated
2 matzot made Into crumbs
Artificial sweetener to equal 8
tsp. sugar
1 tap. cinnamon
Y. tsp. salt
In a large bowl beat egg
yolks; add apples, matzo
crumbs, sweetener, cinnamon
and salt. In a separate bowl,
beat egg whites until stiff and
fold into apple mixture. Pour
into a 9-inch cake pan; place
cake pan In larger pan contain-
ing water to depth of 1-Inch
and bake at 350 degrees F. for
30 minutes or until brown. Di-
vide evenly. Makes 4 servings.
Supplement as required. Each
serving Is equivalent to: 1 egg,
1 serving fruit, and 1 serving
bread.


MUSHROOMS
EN BROCHETTE
1 small orange
12 cherry tomatoes
12 whole mushroom caps,
blanched
2 medium green peppers,
seeded and cut Into 12 pieces
Cut orange into eighths. Di-
vide orange and vegetables
into 4 equal portions. Thread
each portion on a 12-Inch
skewer, alternating pieces of
orange, cherry tomatoes,
mushrooms and green pep-
per. Place Ina broiler pan.
Broil for 10 minutes turning
occasionally. Makes 2 serv-

ings, 2 skewers each. Each
serving is equivalent to Y2
serving fruit and 13. cups veg-
etables.

MATZA BREI
2 medium eggs
Y. cup water
Y. tap. cinnamon
Y. tsp. salt
1 matzo broken into pieces
In a medium bowl beat eggs
slightly. Add water, cinnamon,
salt and maize; let stand 10
minutes. Place a non-stick
skillet over medium heat for 3
minutes; add matzo mixture;
cover and cook until browned
on bottom. Slide onto a dish
and Invert into skillet to brown
other aide. Divide evenly.
Makes 2 servings. Each serv-
ing is equivalent to 1 egg and 1
serving bread.

PRUNE STUFFED DUMPL-
INGS
2 medium eggs
6 ox. peeled, cooked potatoes,
mashed
1 matza board, made into
crumbs
1/2 tsp. salt
8 dried medium prunes, pitted
Sweet and Sour Sauce (recipe
follows)
in a medium bowl, beat
eggs; add potatoes, matzo and
salt. Divide evenly Into 8 balls.
Press a prune into the center
of each ball. Place balls, one
by one, In a medium saucepan
containing boiling water;
cover and simmer for 15 min-
utes. Divide evenly. Serve with
Sweet and Sour Sauce. Makes
2 servings. Supplement as re-
quired. Each serving Is equiv-
alent to 1 egg, 1 serving choice
group, 1 serving bread and 1
serving fruit

SWEET AND SOUR
SAUCE
medium pineapple
Y2 cup water
2 tsp. catsup
Artificial sweetener to equal 2
taps. sugar
1 tsp. cider vinegar
Y2 bouillon cube, crumbled
Dash cinnamon
Salt to taste
1 tsp. potato starch, dissolved
In 3 tbsps. water
2 dried medium prunes, pitted
and diced
Pare and cut pineapple into
small pieces over a bowl to
catch juice. In a medium
saucepan combine pineapple
and juice, water, catsup,
sweetener, vinegar, crumbled
bouillon cube, cinnamon and
salt. Cook over low heat for 5
minutes, stirring occasionally.
Add dissolved potato starch,
stirring constantly until thick.
Add prunes and heat. Divide
evenly and serve over Prune

1 medium pineapple, pared
and cut In chunks

In a saucepan cook carrots
in boiling water to cover for 8
to 10 minutes; drain reserving
1 cup liquid. Set carrots aside.
In saucepan combine reserved
liquid, sweetener and lemon
juice. Bring to a boil, reduce
heat; add dissolved potato
starch to liquid mixture, stir-
ring constantly until thic-
kened. Remove from heat; add
carrots and pineapple, stirring
to coat Divide evenly. Makes 4
servings. Each serving is
equivalent to 1 cup vegeta-
bles, 3. serving something
extra (3/4 teaspoon potato
starch) and 1 serving fruit.
