The bill abolishes the exemption committee which until now inter- viewed women who applied for religious deferments to determine whether they were observant. Zucchini Quiche 4 zucchini, sliced 1/4" thick Salt and pepper 1 9" pie crust prebaked 15-20 minutes at 450 degrees 3/4 cup grated Swiss cheese 3 eggs 1 cup heavy cream Y. tsp. nutmeg Parboil zucchini In lightly salted water for three minutes; drain. Sprinkle bottom of pie shell with Y4 cup cheese. Ar- range zucchini In decorative circular pattern in the pie shell. Lightly season with salt and pepper. In a cup, lightly beat the eggs with the cream, salt, pepper, and nutmeg. Pour over zucchini. This quiche can be made with precooked asparagus of spinach, sauteed mushrooms or sauteed onions. Basic Pie Crust Basic Pastry I (for 2 crusts) 2 cups flour tsp. salt 1 tbsp. sugar Y4 lb. butter or margarine or 1 cup shortening Y2 cup ice water Y2 For a Rich Pie Crust for a 1 Tart Shell 1 cup flour 1 egg yolk 1 tbsp. sugar Yr cup sweet butter Y2 tsp. lemon rind ice water to combine You may use unbleached flour for plecrusts or part whole wheat flour, part un- bleached white. Put flour on a board or In bowl. Add salt and sugar and lemon rind if desired. Stir with your fingers. Rub in the butter, margarine, or shortening. You can use less if you want. The mixture should resemble cornmeal. Add egg yolk if de- sired, 14-3/4 cup water, as needed, to make a dough that will stick together and form Into a ball. Don't handle any more than necessary. For a baked "blind" pie crust, prick crust with fork, line with foil, weight down with rice or dry beans (red, black, pink, or white — choose your color) and bake In 400 degree oven for 15-20 minutes till golden . After 10 minutes you may re- move the foil and beans. They prevent the crust from puffing up. (Incidentally, the dry beans may be reused many times. Keep them in their own labeled cannister.
